Fried shrimp is a delicious and easy-to-make seafood dish that can be enjoyed as an appetizer or main course. Here's a simple and tasty recipe for crispy fried shrimp:


Ingredients:

- 1 pound (about 450g) large shrimp, peeled and deveined

- 1 cup all-purpose flour

- 1 teaspoon salt

- 1/2 teaspoon black pepper

- 1/2 teaspoon paprika

- 1/4 teaspoon cayenne pepper (adjust to your preferred level of spiciness)

- 2 large eggs

- 1/4 cup milk or buttermilk

- Vegetable oil, for frying

- Lemon wedges, for serving (optional)

- Cocktail sauce or tartar sauce, for dipping (optional)

Instructions:

1. Prepare the shrimp: Rinse the shrimp under cold water and pat them dry with paper towels. If the shrimp have tails, you can leave them on for a nice presentation, but it's also fine to remove them.

2. Set up the breading station: In one bowl, combine the flour, salt, black pepper, paprika, and cayenne pepper. In a separate bowl, whisk together the eggs and milk or buttermilk.

3. Heat the oil: Pour enough vegetable oil into a deep skillet or Dutch oven to reach a depth of about 2 inches. Heat the oil over medium-high heat until it reaches around 350-375°F (175-190°C). Use a kitchen thermometer to monitor the temperature.

4. Coat the shrimp: Dip each shrimp into the flour mixture, shaking off any excess. Then, dip it into the egg mixture, ensuring it's fully coated. Finally, dip the shrimp back into the flour mixture, pressing the flour onto the shrimp to form a crispy coating.

5. Fry the shrimp: Carefully add the breaded shrimp to the hot oil, frying them in batches to avoid overcrowding the pan. Cook the shrimp for 2-3 minutes per side or until they turn golden brown and crispy. Be careful not to overcook them, as shrimp cook quickly and can become rubbery if fried for too long.

6. Drain and serve: Once the shrimp are cooked, use a slotted spoon to remove them from the oil and place them on a plate lined with paper towels to drain any excess oil.

7. Serve: Fried shrimp are best served immediately while they're still hot and crispy. You can serve them with lemon wedges for a tangy kick and offer cocktail sauce or tartar sauce on the side for dipping.
